THE NO DOG SEQUEL

So granted that I've devoted hank's primarily to the carnivore but hell I even go veggie once in a while.  So as another version of my good friend Jenn's "No Dog" concept, Monday's special will be MEDITERRANEAN NO DOG.  Grilled eggplant, onion, tomato, roasted red pepper and melted mozzarella cheese in a warm bun topped with our killer chipotle mayo.   

It's making me feeling good about myself just thinking about it!

In the wake of my nano second debut on Anthony Bourdain's show, No Reservations, I heard rumors of an obscure creation called the Mother-in-Law shown on his Chicago segment.  How did I escape my hometown missing this strange concoction?  We it certainly tickled my palate's interest?  It's a South Side thing where you take a tamale, slaps it into a bun, pour on chili and then throws on some cheese.  Not mean enough for ya?  How about some onions and hot sauce on top of it too, now that's bitch'n.  Sounded good to me,  so what the hell, lets live dangerously and put it on Monday's Special!

PIZZA DOG

So outside of hot dogs I obviously have an obsession with pizza!  Sorry folks, can't help it, so here it is for this Monday's special (1/26/09).  Seems simple enough, take a grilled Italian Sausage, pour on some homemade pizza sauce, add sauteed green pepper then pile on the mozzarella cheese.  Too simple, so here's a trick that I'm borrowing from my friend Cheryl, BLOWTORCH the cheese.  

Speaking of burnt cheese, it is interesting to look at certain cooking techniques.  Chef Dale Levitski (Top Chef season 3) once said to me "the flaws in the dish can be the highlight".   He would intentionally let the cheese on his Croque Monsieur ooze out onto the pan so it would get nice and crispy.  Amazing sandwich, I hired him to work at Trio because of it.  I guess that will have to show up as a special sometime soon.   Stay tuned.....
