But besides that I also decided to make an old favorite recipe of mine from the days when I atarted cook. The year is 1977, I quit my job as a fire protection design engineer to become a cook at Café Figaro in Chicago. Debbie Majic was the chef, or in those days, just considered a cook at here European Cafe. In my opinion though, she was one of the best and part of the initiation of fine cuisine in Chicago. One of my most memorable recipe of hers was Chocolate Cheesecake, a creamy double chocolate cheesecake in a chocolate cookie crust. Lighter in texture than most it is most definitely a pure chocolate delight.
Making variations of finer dishes I’ve experienced in my career has been one of desires for hank’s. Partly selfish, partly latent cooking desires, I love bringing these recipes to Hawaii. Be there this Monday to share in some my passions.
